With his brilliant career, chef and owner of Da Mimmo, Louis Verstrepen embodies the culinary renewal of the Michelin starred restaurant which opened more than 25 years ago in Woluwe-Saint-Lambert.
Trained by great chefs such as Joël Robuchon and Anne-Sophie Pic, he developped a unique style combining technical precision and aromatic sophistication. His cuisine is constantly evolving and demonstrates a permanent innovation, offering guests a unique experience during each visit.
When he took the reigns of the restaurant in 2023, Louis Verstrepen not only inherited a renowned establishment, but also transformed it into a true laboratory of flavors where tradition and modernity coexist harmoniously. His vision, inspired by his travels around the world, reflects in bold creations that honor the classics while adding contemporary touches. This mix of old and new attracts both regular guests and newcomers, all eager to discover the Italian cuisine through the prism of chef Verstrepen.

He can also count on the unwavering support of Nicola Galderisi, his right-hand man for several years.
